If you are looking for a super easy, totally yummy dessert look no further! I have been making this brownie recipe for years but only started making them into bites a few months ago. I needed a dessert to bring to my son’s school and didn’t have all the ingredients for cupcakes and frosting!
Of course, we were in the middle of one of the many NE snowstorms this winter so the store was not an option. What do you make for little hands… Brownie bites of course!
Last weekend they took on a new spin! A friend who was coming over and my hubby love mint chocolate chip ice cream, so I thought why not make Peppermint Brownie Bites! Using my dōTERRA peppermint oil it was so easy to infuse a natural, vibrant peppermint flavor into my tried and true brownie recipe!
1/2 cup butter (melted)
1 cup turbinado sugar (or sugar of your choice)
2 eggs (can substitute egg whites)
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup whole wheat flour
1/4 tsp salt
1/4 tsp baking powder
1/4 cup dark chocolate pieces
3 drops dōTERRA peppermint oil
Preheat oven to 350 degrees.
Line a 24 cup mini-muffin tin with paper liners or spray with cooking spray of your choice.
Combine melted butter and sugar with a whisk. Add eggs and vanilla to sugar mixture and mix well. In a separate bowl, mix cocoa, flour, salt and baking powder. Slowly add dry ingredients with wet combining well. Mix in chocolate pieces and peppermint oil.
Pour mixture into prepared mini-muffin tin, about 3/4 full. Bake for 18-20 minutes, or until tester comes out dry. Baking times may vary based on size of tins and oven temperature.
