On a weekend trip to one of my favorite grocery stores, Trader Joe’s, I stumbled upon a yummy and super easy side dish that is perfect for summer! 3 easy ingredients, steamed lentils, mirepoix (chopped onions, celery and carrots) and champagne vinaigrette… Voila Lentil Salad!

Ingredients
1 package Trader Joe’s Lentils
1/2 container Trader Joe’s Mirepoix
1/2 cup Trader Joe’s Champagne Vinaigrette

Add all ingredients to a bowl leaving the dressing for last. Mix well to coat.

If you do not have a Trader Joe’s near you any brand of steamed lentils will do. Most stores carry them. As for the mirepoix you can just chop 1 cup of carrots, onions and celery mixed. And add your favorite light dressing!
