Crisp Salad for Summer or Anytime!

I wanted to make a nice crisp salad for dinner and knew I had mixed super greens and cole slaw mix at home…. So now what to add to it?

On a quick trip to the grocery I grabbed cherry tomatoes, a small head of broccoli and shelled edamame. Since it would be for dinner I added some farro for extra protein.

A few simple ingredients is all you need for a healthy and filling meal!

1 cup broccoli florets (cut small)
1 cup cherry tomatoes halved
1 cup shelled edamame
1 cup cole slaw mix
2 cups mixed green (I used mixed super greens)
1 cup cooked farro (or grain of your choice)
1/4 cup Mandarin Ginger Dressing

Mix all ingredients together in a bowl, as dressing and mix to coat.

And the left overs are great for lunch the next day!

The only problem with this salad was I am supposed to be doing a wheat elimination for 2 weeks and farro is a wheat grain, oops! Next time will have to use quinoa…
