I just can’t seem to let ripe bananas go bad! And with 2 staring at me the other night I debated banana bread or banana muffins and started trolling the internet for ideas. I came across a bunch of different recipes for banana squares and merged a few together to get these yummy and delicious Banana Chocolate Chip Oatmeal Squares!
Ingredients –
2 very ripe bananas
1/3 cup canola oil
1 egg
2/3 cup light brown sugar, packed
3/4 cup flour
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
2 cups quick cooking oats
2/3 cup dark chocolate chips
Preheat oven to 350 degrees and grease an 8×8 baking pan with cooking spray or butter.
You will need 2 bowls for this recipe. In one bowl mix the dry ingredients – flour thru oats – and set aside.
In your second larger bowl, beat one egg and add the oil and sugar. Mix until well combined. Add in mashed banana and incorporate into wet mixture. Once incorporated, add the dry ingredients and mix well. Lastly, fold in the chocolate chips.


Pour batter into prepared pan and bake for 25 minutes. Cool and cut into squares.

These make a great breakfast or snack to pack for your little ones. My boys loved them! Just cut into squares and layer with waxed paper in a freezer bag.
