An Easy Weeknight Meal…

In the time it took to make pasta I was able to pull together a delicious, healthy and nutrious meal! It doesn’t need to be a complicated recipe to be yummy, a few simple ingredients and you are on your way…

Another reason I love this meal is because the greens and beans provide fiber to help break down the carbs in the pasta and stabilize blood sugar. Tasty, nutrious and promotes digestion… What more can a girl ask for! 

  
Ingredients 

2 tbsp olive oil

1 garlic clove minced

1 can cannelinni beans, drained (reserve 1/4 cup of the liquid)
1 1/2 cups arugula 

1 cup shrimp

Juice of half a lemon

2 tbsp white wine

In a medium size pot, bring your water to a boil for your pasta. Cook pasta according to package directions, reserving 1/4-1/2 cup of pasta water. 

In a saucepan, heat the olive oil and add minced garlic.  Let garlic start to brown and add the cannelinni beans and reserved liquid, heat through (liquid will start to thicken). Add lemon juice, wine and arugula. Cook for about 8-10 minutes. Season with salt and pepper to taste. 

Pour mixture over cooked pasta and mix well to incorporate. Add reserved pasta water to reach desired consistency. Serve with grated cheese or ricotta and crunchy bread for dipping! 

Cooking Tip – if you don’t have fresh garlic in the fridge or trying to cut back on time you can add 1/8 teaspoon of garlic powder to the olive oil in its place. As the oil starts to heat the garlic will become fragrant.
