We spent the day celebrating my lil one’s 3rd birthday today! Lots of fun was had starting the day playing with new toys, lunch and a trip to the park, an afternoon movie and rounding out the day with a little more park time and dinner!
Of course we needed to end the night with lil treats for the little man! And these birthday brownie bites are perfect. I find the bite sized treats are great when celebrating with kids because they are easy to eat and no sugar overload!

In the words of my boys “they are awesome!”
1/2 cup butter (melted)
1 cup demerara sugar (or sugar of your choice)
2 eggs (can substitute egg whites)
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup flour
1/4 tsp salt
1/4 tsp baking powder
1/4 cup dark chocolate pieces
24 mini marshmallows
Preheat oven to 350 degrees.
Line a 24 cup mini-muffin tin with paper liners or spray with cooking spray of your choice.
Combine melted butter and sugar with a whisk. Add eggs and vanilla to sugar mixture and mix well. In a separate bowl, mix cocoa, flour, salt and baking powder. Slowly add dry ingredients with wet combining well. Mix in chocolate pieces.
Pour mixture into prepared mini-muffin tin, about 3/4 full. Bake for 8-10 minutes, remove from oven and put a mini marshmallow on each bite. Return to oven for another 10-12 minutes or until tester comes out dry. Baking times may vary based on size of tins and oven temperature.
