If you are anything like me you love peanut butter anyway you can get it… Why not work peanut butter into dinner and make an easy and delicious peanut sauce! With just a few ingredients from the fridge and pantry you can whip this sauce up in no time…
1/4 cup soy sauce
3 tbsp rice wine vinegar
3 tbsp water (plus 1 tbsp to thin sauce if needed)
1 tbsp oil
1/2 tsp ginger
1/2 tsp sriracha
1 garlic clove minced
2 cups steamed broccoli
In a small saucepan, heat oil over medium heat and add garlic. Cook until the garlic starts to become fragrant and begins to brown. Add soy sauce, rice wine vinegar, water and ginger. Mix well to incorporate and heat through about 3-5 minutes. Remove pan from heat and add peanut butter and sriracha. With a whisk mix well until the sauce becomes smooth. If you prefer more spice, add more sriracha and if you prefer a thinner sauce you can add water 1/2 tbsp at a time to get your preferred consistency. Or if you are like me you prepared the sauce and then did bath time and when you came back it was too thick, I got your back moms! Just add a little warm water to thin it out!

Then you are ready to top your favorite veggies, chicken, noodles with this delicious sauce! I put the sauce over steamed broccoli and served with a side of naan to dip in the sauce.
