Dark Chocolate Chip Muffins

One of my favorite weekend things to do is make breakfast for my boys.  The weekday mornings are so busy and the weekends are when we get some extra time to connect as a family!  I don’t know if they get it from me or if it is because they started cooking at a young age at school but they LOVE to help in the kitchen!

Yesterday was a lazy morning for us all with the boys sleeping until 8:30 AM!!!!!  Yes you read that right!  When we all finally got moving I asked the boys if they wanted muffins or pancakes… the answer MUFFINS!

So we went to work, my little helpers helped gather the ingredients and beat the eggs.  I decided to use coconut oil in place of butter for a dose of healthy fat.  If you have not baked with coconut oil it is a must!  Keeps your goodies nice and moist and also gives them a richer flavor.  I also sneak in dark chocolate whenever baking for the kiddos.  They have no idea, chocolate is chocolate and it makes momma feel better!

1/2 cup coconut oil (melted)

2 eggs

1 cup milk

2 cups all purpose flour

1/2 cup sugar

1/4 cup brown sugar

1 tsp baking powder

1 tsp salt

1/2 cup dark chocolate chips

 

Preheat oven to 400 degrees.

Line muffin tins with paper baking cups (I made 24 mini muffins and 6 large muffins.

In a large bowl mix flour, baking powder and salt.  Set aside.

In a separate bowl, beat eggs well with a wire whisk.  Add milk and coconut oil.  Beat with whisk until mixed well.  Slowly add sugar and mix well to incorporate.  Add the egg mixture to the flour mixture stirring just until the flour is wet.  Stir in the chocolate chips.

Spoon batter into prepared muffin tins, about 2/3 full.  Bake mini muffins for 12-14 minutes and large muffins for 18-20 minutes.  Muffins should be golden brown, check with a toothpick to ensure it comes out clean.

Cool completely on a wire rack.


*Cooking times may vary based on your oven.

**Flour tip – I like to use Hodgson Mill Organic Naturally White Flour because it is unbleached, there are no chemical additives or preservatives and is all natural!
