Looking for an easy weeknight meal with just a few ingredients but lots of flavor, a Burrito Bowl is the answer! You can make them as simple or as complex as you want, the sky is the limit!
I kept it simple Ground Turkey, Grilled Corn on the Cob and Yellow Rice. You can really use any rice but I chose yellow rice because my oldest likes it and this way I could use some for his packed lunch. Momma is always thinking!
Ingredients
1 lb ground turkey
3 ears of corn
1 package rice (I used Goya Yellow Rice)
1 tsp chili powder (can adjust based on preference)
1 ½ tsp garlic powder
1 tsp pepper
1 tsp salt
1 tsp cayenne (can adjust based on preference)
1 tbsp tomato paste
1 ½ tbsp olive oil
Sour Cream for topping
- In a small pot, cook selected rice according to package directions
- In a large pan, heat 1 tbsp over medium flame. Add turkey meat and brown for about 6-7 minutes, until meat is no longer pink. Add tomato paste, chili powder, 1 tsp garlic powder, ½ tsp salt, pepper and ½ cayenne, adjust to your desired spice level. Mix well.
- Remove husks from the corn on the cob. Drizzle with ½ tbsp olive oil and remaining garlic powder and cayenne. Heat a grill pan over a medium/high heat and place corn in center of pan. Cook for 8-10 minutes turning regularly to get a char on all sides of the corn. Remove from pan and let cool before cutting kernels from the cob.
- Set up 4 bowls, add rice, ground turkey and corn to each bowl. Top with a dollop of sour cream on each.

If you want to get more creative with your burrito bowl you could top with shredded lettuce, diced tomatoes, jalapenos, sliced avocado, or what I wish I had last night to give it a Mexican Street Corn feel crumbled cotija cheese.
