This is a very long overdue post! I made these little pieces of deliciousness for my son’s 1st birthday! Only the best for my boy… The recipe is super easy and definitely a crowd pleasure! You can make with or without the cinnamon essential oil but I found the hint of cinnamon to be “delightful”!
Cinnamon Cupcakes
1 cup turbinado sugar
1/2 cup butter (at room temperature)
2 eggs
2 tsp. vanilla extract
1 1/2 cups all purpose flour
1 3/4 tsps. baking powder
1/2 cup milk
3-4 drops dōTERRA cinnamon essential oil
Preheat oven to 350 degrees and line a muffin tin with paper liners.
Cream together sugar and butter in a medium bowl. Add eggs, one at a time, beat well and mix in vanilla. In a separate bowl, combine flour and baking powder. Slowly add to creamed mixture and mix well. Stir in milk until batter is smooth. Spoon batter into prepared pan.
Bake 20-25 minutes. Cake is done when it springs back to the tough (or use a cake tester).
Basic Frosting
1/2 cup butter (at room temperature)
3 cups powdered sugar
1/4 cup milk
1 tsp. vanilla extract
Using a hand mixer, beat the butter until smooth in a medium bowl. Slowly beat in the powdered sugar, milk and vanilla until smooth and creamy.
To frost the cupcakes I used a frosting bag with a basic tip. You can also use a storage bag. Spoon frosting into bag and push to 1 corner. Clip corner and use in place of frosting/pastry bag.
